Cognac gave its name to the spirit, and the great houses still line the Charente as it drifts through the town — their cellar walls darkened by the black fungus that feeds on evaporating brandy, la part des anges.

Most of the famous maisons offer tours and tastings, and the old town behind them is an attractive tangle of half-timbered houses and quiet squares.
